South Perth: Rambla on Swan named Restaurant of the Year at industry awards

RICHARD Johnson professes a love of simple cooking.

The head chef at Rambla on Swan in South Perth is not a fan of “new-fangled” styles of cooking such as food microbiology.

“You see Heston Blumenthal do some interesting things but for me it’s the basics that I love,” he said.

“Everyone thinks about Asian or European styles with their cooking but I love French food because there are simple, clean flavours.

“Some of my favourite dishes include the ones with dhufish.”

Rambla on Swan won the Restaurant of the Year title at the Restaurant and Catering WA Awards for Excellence at the Perth Convention and Exhibition Centre on August 28.

Mr Johnson said what made the restaurant special and the reason why it had been recognised for several awards in just two years of trade was that the staff loved what they did.

“When I started cooking 38 years, people were beaten up, locked in freezers and yelled at,” he said.

“These days you know that’s not going to work and we are having fun here, sometimes too much fun. My basic philosophy is that I want people to enjoy coming to work.”
