Carlin a cut above the rest

Carlin Bowen, of Oakford, works at The Butchers Hook and says he loves expressing his creativity in cuts of meat by keeping the window fresh and full of gourmet and boutique meats.

Mr Bowen said the competition assessed how cleanly he could take out cuts, quizzed him on his cooking knowledge and ensured he complied with occupational health and safety regulations.

Mr Bowen started out as a ‘clean-up kid’ five years ago, got bored and started learning butchering skills before being offered an apprenticeship.

He left school to pursue butchering and said winning the WA event was a big achievement.
