A SOUTHERN River apprentice butcher will put his skills to the test as the only WA participant in a national competition.

Rump Shakers third year apprentice Matthew Sandiford (18) will represent WA in the Apprentice of the Year category during this month’s National Sausage King Competition.

As part of the competition, Mr Sandiford will need to complete a theory component and a skills component before taking part in a mystery box challenge in front of the public and other butchers.

Rump Shakers owner John Bain said the young apprentice had shown talent and dedication to his role and had earned the chance to represent his state.

“Matt was chosen to represent Western Australia in this years Australian Meat Industry Council Apprentice of the Year competition for his skills and good attitude towards his training,” he said.

“This is massive, there’s hundreds off apprentices, so we are very proud of him.

“We (the shop) won a state award last year and took out second place in Australia for our gourmet burgers and I think this really helped Matt want to go to the Nationals too.”

The 2019 National Sausage King Competition will be held at Fremantle’s Esplanade Hotel on February 15 and 16.
