Globetrotting Perth chef celebrates 30-year stay with Hilton hotels

GLOBETROTTING chef Michael Schmidt has carved out a long career with Hilton hotels, celebrating 30 years this month.

The Germany-born Willetton resident worked in Switzerland, France, Belgium, Canada, Egypt, Nigeria, Indonesia and Vietnam before settling in Perth 15 years ago.

“I always wanted to travel and see the world,” he said.

“I’ve lived in all these different places before so I don’t know if I am German, I don’t know what I am.

“All the places I have been, I have found the culture here because it is a melting pot, a multicultural society.”

Mr Schmidt said he enjoyed every place he had lived and worked but Egypt held a special place in his heart.

“Egypt was a highlight because I got married there, my wife is from Egypt,” he said.

Throughout the years, Mr Schmidt has shared his kitchen with world famous chefs.

“I really enjoyed the opportunities to work with Maggie Beer, Matt Moran, Luke Nguyen, Manu Fidel,” he said.

“They came in, said hello and some work with us.

“Matt Moran and Luke Nguyen spent some time with us in the kitchen and exchanged ideas, which was lots of fun.”

When he is not whipping up the Parmelia Hilton Adelphi Grill’s daily dishes, he said he liked to explore WA.

“I love camping, exploring, travelling, getting to places you wouldn’t normally get to,” he said.
