Historic hotel gets makeover

Three years in the making, the newly restored heritage-listed building opened as a bar, eatery and casual dining space in the 140 Perth precinct last week.

Perth born and bred, operations manager Saul Brockwell (36) said consumers were educated in terms of their expectations.

“Some very simple offerings around 20 years ago might not be successful now,” he said.

“With Yagan Square and the Perth City Link project on the way, I’m hoping this becomes a thriving space.
