The new seasonal menu, which was launched at a chef’s table event this month, included popular dishes such as pink sea salt seared scallops and twice-cooked pork belly.
On arrival, guests were treated to cocktails and starters in the hotel’s outdoor piazza before taking the best seat in the house to watch Fleming in action.
Having started his apprenticeship at Parmelia Hilton Perth more than 15 years ago, Fleming, also known for paying meticulous attention to detail, won the prestigious Australian Hotels Association for WA Best Chef Award last year.
He has also worked with celebrity chefs including Maggie Beer, Adriano Zumbo, Luke Nguyen, Matt Moran and Manu Feildel.
