Owner and operator Michael Forde said the white wall facing Mary Street, which was painted earlier this year to cover a mural, would not remain blank.

He said a long-term plan for the wall would be developed by October.

‘In the meantime, we will put temporary art or some sort of design on the wall,’ he said.

The bakery is the fourth Beaufort Street collaboration between Mr Forde and Alex Cuccovia, who also own El Publico, Cantina 663 and Ace Pizza.

Their El Publico and Ace Pizza business partners Paul Aron and John Little are also involved in the latest venture.

Mr Forde said the ‘artisan bakery’ at the old Soto Espresso site would offer a small range of breads, sweets and savouries.

He has also applied for a restaurant liquor licence for the bakery, to offer a dine-in option for customers.

The application says the restaurant is expected to offer six wines and two beers.
