His winning flavours were apple pie, berry temptation, passionfruit yoghurt, pavlova, salted caramel and honeycomb, fig strudel, hazelnut and vanilla.

The Italian chef known as Mimmo said it had been a dream come true.

�Winning these awards makes me feel proud of myself as I was able to achieve my dreams,� he said.

This is the second year Mimmo�s Gourmet Gelato has had success in the show, wowing judges with traditional family recipes that date back 60 years.

Mr Sabatino said he was very happy with his silver medals.

�Winning gold is not so important; it means I�ve hit the top� that�s it, but winning silver pushes me to work harder and reach new heights,� he said.

Mimmo�s Gourmet Gelato is made fresh to order straight from his own back yard in Helena Valley.

He has his own purpose-built building equipped with freezers, a blast chiller, a small kitchen and gelato-making machines.

His passion came from growing up in a culture where food was a major part of living.

�At a young age I worked in many patisseries in which I was surrounded by authentic gelato,� he said.

�From there my love for gelato persevered.�

He said making gelato involved a lot of chemistry, balancing out all the ingredients to make it perfect.

His favourite flavour would have to be the chilli dark chocolate because of its creamy rich texture and hint of chilli.

�My passion for producing the best gelato drives me to constantly create new and unique flavours, as well as mastering the authentic flavours derived from my Italian culture,� he said.
