Ms Carey worked at the Ebola virus treatment centre in Sierra Leone during the height of the epidemic and is trying to raise $150,000 for computers for health workers there to further their education.
Soroptimist International Joondalup and the Rotary Club of Hillarys will host the event on May 23 at Hillarys Yacht Club.
