Italian favourites come together in Mandurah’s first chicken parmi pizza

WHAT happens when two Australian cuisine favourites combine? You get chicken parmesan pizza.

The pizza is the brainchild of Sean and Olga Cocksey owners of Caffe del Mare in Mandurah.

Sean and Olga met in Russia where Sean was an electrical construction manager and Olga was a lawyer.

When Sean’s visa ran out, they had to return to Australia and decided they both wanted to return to hospitality.

Olga had worked as a barista before law and Sean had trained as a chef.

They employed Chef Bruno Bazzani to develop their café concept and he left them with advice that the couple live by.

“One thing Bruno said, stuck in my mind,” Sean said.

“Even when you’re quiet, don’t get down in the dumps, get creative.”

So it was on a windy winter’s day, when the couple were trying to decide on a knew dish.

Son Sergi suggested putting an Australian favourite – the chicken parmi – on the menu.

But boring is not the café’s style, so they decided on a chicken parmi pizza.

The pizza features mouth watering layers of chicken, ham, secret pizza sauce and cheese on a crisp base.

It’s not just pizza that is making the café popular however, Olga’s Russian menu, served only on Saturday nights has expats coming from Perth.

The Russian menu features Pelmini, Pirozhki and Blini.
