FORGET dark, white or milk chocolate, the world’s newest chocolate discovery in 80 years has hit the streets.
Spanish-inspired chocolateria San Churro has today announced it is the first retailer to launch a range of ruby chocolate nationwide.
In development since 2004 and first unveiled by Swiss chocolatier Barry-Callebaut in China last year, the new chocolate’s ruby colour occurs naturally in the “ruby” cocoa bean with no fruit flavouring or colourants added.

The one-hour, two-part, dine-in experience includes a walk through the ages of chocolate history and an education on the subtle tasting notes of dark, milk, white and ruby varieties.
San Churro chief executive Giro Maurici said ruby was arguably the biggest thing to happen to the confectionery industry this millennium.
“To be the first Australian retailer to roll out ruby chocolate nationwide is a major coup,” he said.
