THERMOMIX queen Tenina Holder will share some of her favourite recipes, including minestrone soup with tortellini, at Belmont Forum’s new Fresh Food Precinct this weekend.

The Cooking with Tenina author will walk shoppers through a series of weeknight dinners and weekend lunches that take just 15 minutes to make.

Tenina has shared her hearty minestrone soup with tortellini recipe with Community News.

Minestrone Soup with Tortellini

Ingredients:

Handful Italian parsley

2 cloves garlic

1 red onion, halved

1 chorizo sausage in pieces (about 150g)

400g tin tomatoes

700g liquid stock of choice

2 stalks celery, sliced

1 potato, diced

A few mushrooms, sliced

1 carrot, diced (or equivalent veggies of choice, diced and sliced)

1 tbsp dark brown sugar

1 tbsp balsamic vinegar

70g tomato paste

1 tbsp Umami Paste

400g tin borlotti beans, drained

250g prepared cheese tortellini

Grated Parmesan and lemon zest to garnish

Method:

Place parsley into TM bowl and chop 4 sec/speed 4. Remove from bowl and reserve for garnish.

Place garlic, onion and chorizo into TM bowl and chop 3 sec/speed 6. Scrape sides of bowl and sauté 5 min/Varoma/Reverse/speed 2.

Add all remaining ingredients except beans, tortellini and garnishes.

Cook 20 min/100°C/Reverse/speed 1.

Add beans and tortellini and cook 5 min/100°C/Reverse/speed 1. Allow to rest in TM bowl for at least 10 minutes prior to serving with chopped parsley, grated parmesan and lemon zest.
