Aaron CorlettSouthern Gazette

A COMO butcher is going for the crown.

Barboro Butchers on Preston will compete in the 2017 National Sausage King competition, to be held in Hobart on February 18.

The butchers won the continental category at the WA Sausage King awards for its pork and fennel sausage, giving it the chance to sizzle on the national stage.

Owner Dave Barboro said it was an exciting feeling to compete in the competition.

“It looks like I’ll be the one representing the business at the awards, apparently it’s a great weekend and it should be a good experience,” he said.

“When we won the WA award, we had a lot of customers who said the judges had good taste.”

Mr Barboro said he believed the secret to the butchers’ success was consistency.

“Once we’ve got a product that the customers like, we try to make it the same week in, week out,” he said.

“We are going there without many expectations, it’s just about having a good time.”
