After Monday’s wins, he reiterated his belief that the use of quality produce outweighed fancy construction in a successful restaurant kitchen.

“Our menu is simple, we use clean flavours and fresh ingredients to deliver quality dishes to our customers every time,” he said.

“Currently there is a lot of experimentation in cooking, but Rambla’s approach is to take a step back and let the food be the hero, not the chef.”

Chief executive Hugh Brown praised the restaurant’s staff for providing consistency.

“There are so many elements to running a successful restaurant and event functions centre, but the most important element is our team,” he said.

“To win awards for the second year in a row demonstrates the ability of our team to produce a consistently excellent dining experience for Rambla on Swan’s customers.”
