Seafood gets glitzy at resort

Perth chef Peter Manifis and fishmonger Josh Catalano will share their love of seafood with guests in a series of tantalising events centred on local seafood enjoyed in the resort.

Manifis said he was thrilled to be invited as the headline chef of the inaugural three-day event and was looking forward to working with Catalano.

“The weekend is all about taking the opportunity to enjoy what we have on offer on our very own doorstep, with both the stunning surrounds and the great produce, so it will be a good mix of relaxation and food experiences,” Manifis said.

“Friday will be a relaxed evening on the Okari Deck, where I’ll get to spend time with the guests. Then Josh will share tips on how to prepare your seafood at home and some different dishes.

“Sunday evening’s dinner will be taking inspiration from amazing flavours of the local bush spices of the Kimberley region and using them to complement the amazing fresh seafood WA has to offer.”

Manifis, who has visited the region over the past two years as a guest chef at the Cable Beach Club’s Telethon weekend, said he had previously enjoyed hosting a Seafood Cocktail reception that had always been very popular with the invited guests.
