THE headlining chefs for this year’s Entwined in the Valley were revealed at the premier food and wine festival’s launch at Sandalford Estate yesterday.

Hosted by the City of Swan, the three-day event combines the Swan Valley’s expert chefs, winemakers and local producers to highlight the region’s best.

Leading Australian pastry chef Anna Polyviou, also known as the ‘punk princes of pastry’, will headline the three-day food and wine extravaganza from November 4-6.

Currently the head pastry chef at the Shangri-La Hotel in Sydney, Polyviou is also known for her 74-step dessert ‘Anna’s Mess’ – a take on the classic Eton Mess – which was used as a pressure test on contestants of this year’s MasterChef.

The premiere event of the festival is the seven-course Degustation Dinner, which will take place on the evening of November 6 at Mandoon Estate Winery.

Well-known local chef and humane food ambassador Kiren Mainwaring will join the line up for the third year, creating two of the degustation dishes.

Mainwaring ran Dear Friends in Swan Valley for six years, and now runs Co-Op Dining.

Highly acclaimed chef Hadleigh Troy from Restaurant Amuse in East Perth will also share his expertise with guests of the dinner.

Gourmet Traveller has named the head chef’s restaurant as the number one restaurant in WA eight years in a row.

Veteran Mandoon Estate executive chef Michael Hartnell is the final chef to add his knowledge to the evening’s courses.

Expert and current wine editor for The West Australian Ray Jordan has the enviable role of selecting wine to accompany the seven-course dinner.

Entwined in the Valley will mark the first visit to WA for Anna Polyviou, who will also host an Anna’s Mess Masterclass at Caversham House.

“Entwined in the Valley is going to be a massive festival,” she said.

“The Swan Valley has got some wicked produce and I’m lucky enough to be creating my creations with that produce in November.”

Entwined in the Valley 2016 will take place on November 4-6.
