Coco Cubano will be in the centre's newly revamped Station Square.
It will offer meals for breakfast, lunch and dinner, tapas, espresso and chocolate drinks, cocktails and a range of beverages.
An application for a restaurant licence has been lodged with the Department of Racing, Gaming and Liquor, along with an extended trading permit for liquor without a meal restricted to 120 persons and an alfresco dining permit. Public submissions close on June 8.
