Nolita is the brainchild of Michael De Marte, whose formula for running restaurants seems to be on point given his success with Atomic and La Lola.

He has again sent tongues wagging with his simple and delicious Italian fare. And with his recent application to remove two car bays to make way for alfresco dining also recently approved, it is obvious he can do no wrong.

De Marte said he was pleased the council and public had supported the new restaurant and looked forward to giving the former Pronto premises a new lease on life.

‘We initially bought Pronto as a going concern and decided to give it a new life moving forward, to refurbish it and rebrand it while the council completed their extensive upgrade of Bay View Terrace,’ he said.

De Marte, who has spent 14 years in the industry, said patrons could expect a modern interpretation of a classic Italian restaurant and bar. He listed quality ingredients, fresh flavours, love and care as to what made a good Italian dish.

‘Our commitment is to be the best quality throughout all aspects of our business with no compromise, and respecting the importance of our customers,’ he said.

As for what was good on the menu, his signature dishes the antipasto polipo with grilled octopus, chorizo, potato, salad leaves, chilli, shallot vinaigrette is what he’d recommend for entr�e and his Cotoletta crumbed free range pork cutlet, truffle potato mash, savoy cabbage, spinach with parsley, lemon got the nod for mains.

Nolita is at 16 Bay View Terrace, Claremont.
